Pumpkin Bars

Ingredients:
For the Pumpkin Bars
2 cups pumpkin
1 cup vegetable oil
2 cups sugar
4 eggs
2 cups flour
2 tsp baking powder
1⁄2 tsp salt
1 tsp baking soda
2 tsp cinnamon
1 tsp ginger
For the Frosting
3 oz cream cheese
1 tsp vanilla
1 tbsp heavy cream
1 3⁄4 cups confectioners’ sugar
3⁄4 stick softened butter
Directions:
For the Pumpkin Bars
Mix all ingredients together.
Bake at 350°F for 20-25 minutes on a greased jelly roll pan. Cool, then frost.
Directions for the Frosting
Mix softened butter and cream cheese until well blended. Add confectioners’ sugar and vanilla. Mix until creamy.
